Harvest Time

Got lots of harvesting to do this afternoon, (after work) carrots,beets,string beans and zucchini. Going to have to get out the pressure cooker to can some of the beets and string beans. As you know string beans can be hard if you freeze them up although some folks like them I prefer to have them well cooked and soft so I can them. The beets I will pickle and can. The carrots will be blanched and then frozen in bite sized pieces, they will be good for at least 6 months in the freezer. And the zucchini I will again blanch and freeze some of the bigger ones I will shred and make some zucchini bread.
